Meal prepping on Monday

Tonight at the house we are preparing dinner and packing our meals for the next few days.

We are preparing a simple meal that includes baked chicken, pinto beans, boiled broccoli and corn.

My seasoning style is very simple as I am still learning how to prepare and cook better food.

Tonight for the chicken I simply applied a bbq seasoning rub called Butt Rub prior to putting it in the oven at 400 degrees for about 25 minutes.

I prefer to cook the chicken at this higher temp for shorter times so the outside gets crispy and keeps the juice inside so the inside stays tender and juicy.

For the beans i sprinkled some all purpose seasoning (Adobo) and to try something new added a little barbecue sauce (sweet baby rays) while simmering.

The broccoli and corn are simply boiled until ready and broccoli is strained so it doesn’t get too soggy.

The total preparation and cooking time is roughly 30 minutes and yields at least six to eight meals. The total cost is less than going out to fast food once. The health benefits are significantly greater as this simple meal is packed with lean protein, good carbs and fiber, and yummy vegetables.

We used 3 frozen corn cob halves, (my daughter got to one before photos) four large chicken breast, 3 cans of pinto beans, and two 14oz bags of frozen broccoli. And a small amount of Adobo, Butt Rub, and BBQ sauce.

The easiest way to maintain a healthy diet is to prepare and pack your meals in advance. That way when you are hungry there is no excuse to not eat well. Simply pack your meals in microwavable containers and healthy meals can be ready in minutes.
